I browse Paula Deen’s website quite often and was intrigued by Bobby Deen’s lighter recipe makeovers. I bookmarked several to tryI’m curious to see if they are even close to the “real thing”, aka Paula Deen’s full of flavor recipes. Bobby’s Un-fried Chicken was the first on my list to try.

I even bought a huge box of Corn Flakes just for this recipe. My family doesn’t normally eat Corn Flakes unless they’re Frosted. I can use the whole box making these full of flavor, crunchy chicken strips over and over again. You can add any spices you want to the crumbs. I kept it simple this time, but next time, I’m going to spice things up. Maybe I will use some cajun spices or BBQ spices and leave out the lemon. I can’t wait to make these again.

Bobby uses chicken thighs in his recipe, my girls and I prefer white meat chicken. I simply cut boneless, skinless chicken breasts into long strips. The more crunchy crust, the better for me! Chicken nuggets would also be a winner in our home.

I even prefer these over the Panko bread crumb strips I normally bake in the oven. Stay tuned for more of Bobby’s lighter recipe makeovers! Spray a large baking sheet with non-stick cooking spray. Season both sides of chicken with salt, lemon pepper, and garlic powder. In a large bowl, mix together the mayonnaise, lemon zest, lemon juice, and egg white. Pour Corn Flake crumbs onto a large piece of wax paper.

Season with lemon pepper and garlic powder. Roll strip around in the Corn Flake crumbs and press lightly to help it stick well. Place coated strip on the prepared baking sheet. Spray with olive oil cooking spray. The Cheesy Mac is already on my list to try. Mac ‘n Cheese is my family’s all time favorite!
